Umeshu

A qoute from Wikipedia: “Umeshu (梅酒?) is a Japanese liqueur made from steeping ume fruits (while still unripe and green) in alcohol (焼酎 shōchū?) and sugar. It has a sweet, sour taste, and an alcohol content of 10-15%. The taste and aroma of umeshu can appeal to even those people who normally dislike alcohol.”

Progress

  • 2011-07-28 - 7×2.2l jars were filled with Klar Brøndum, sugar, and plums. We used 4kg sugar, 8×0.75l Klar Brøndum and an unknown amount of ripe/unripe plums. 3 jars with unripe plums and 4 with ripe plums.
